Balsam Gin Sparkler
Must Try Festive Drink
It is an iconic smell, one that brings back memories of childhood. For me, as soon as the smell of fresh balsam hits the air a smile immediately spreads across my face. Very few candles can replicate the true smell, and any air freshener should be tossed in the garbage. The Balsam Gin Sparkler takes those warm fuzzy feelings a Christmas tree brings to you and wraps it neatly into a glass. If you have ever wondered what Christmas tastes like- this is the drink for you.

Ingredients
1 1/2 oz citrus forward gin (like Hendricks, Tenn South Abernath or Beefeater 24)
1 oz balsam syrup (see below)
1 oz cranberry juice
2 oz sparkling water
cranberries for garnish
Fill glass with ice and top with the gin, balsam syrup, cranberry juice and sparking water. Give a stir and garnish.
Balsam Fir Syrup
1 c balsam fir needles, roughly chopped
2 c water
1 c granulated sugar
1 1/2 tsp lemon juice
In a medium saucepan, combine sugar and water, heat over medium/high heat until boiling and sugar is dissolved, stirring occasionally. When boiling, remove from heat, stir in balsam needles and lemon juice. Cover an let sit until room temp, taste, and allow to sit longer if you want a stronger flavor. When it is ready, strain through sieve with cheesecloth. Will keep in fridge for a few weeks. Cheers!
